Failure in the Kitchen

This doesn't happen very often, but there was a dismal failure in the kitchen recently. In an attempt for a healthier lifestyle I have eschewed pork and beef. To this end, new recipes have found their way into my kitchen. This recipe looked good and I wanted to try it. I defrosted the pound (or so) of ground turkey, added the coarsely ground black beans, along with garlic powder, diced onions and parsley. O, and one egg. Patties were made and then Georged (as in George Foreman Grill).

When the lid was lifted at the end of the cooking time four out of six burgers split in half . Oops! What to do? Not wanting to throw it out, that would be wasteful, I wrapped the two whole patties in plastic wrap and further crumbled the rest. I 'flash' froze it and put it into a freezer bag and to be used like crumbled ground beef.

It tastes good but did not hold up as a patty. I do not have a food processor so I used my blender to 'chop' the black beans. I think my blender is starting to go to appliance heaven because it starts out at one speed and goes to high speed all by itself. My 'coarsely ground' black beans were more of a puree. Do you supposed it was too wet to hold up to Georging?

  1. Too wet or too dry. This seems to be the common problem with "healthy" recipes. Baked goods are a BIG challenge for us. I've made bricks of bread, lol. Good save with the crumbles. You could make Chili with that meat. Yum!

  5. I'm not sure what caused the problem as I'm not a "Georger". I do like the taco idea though. Just go light on the cheese and sour cream.

  6. maybe the egg made it too wet. You were making meatloaf instead of burgers.

  7. Since you haven't chewed ( sorry! )pork or beef for a while, turkey was a good plan...but maybe you should have formed the burgers THEN let them rest in the fridge for a while before cooking. Also some ground nuts or rice flour or something to cement them together would have helped.

  8. I make all sorts of patties (my son even will eat FISH patties if I make them!). I often use some mashed potatoe and bread crumbs to help hold things together. I've also used cooked rice that I have sent through the processor if I have left-over rice instead of potatoe. I also like to press the finished patties into bread crumbs for the outside layer. This winter I did experiment a bit with baking some of the meat patties - and that works too. Just out of curiousity I think I would bake 1 of the ones you saved and see how that goes. Sounds like a tasty recipe though and the taco idea is a good save! Cheers! Evelyn

  9. I give you kudos for trying the turkey burgers. I've never been able to get them to hold together so I just use ground turkey for chili. I'd guess the mixture needed some bread crumbs to bind it although all those types of recipes just taste like meatloaf to me. When I try to be a healthy eater (which is not all that often!) I just skip the meat altogether.

  10. OK, I looked at the photo, before I read the post. I have dogs, and I keep the backyard cleaned up. Just saying, I'd hide those in some chili.

  11. I wonder if you could use ketch up instead of eggs and it would hold together better? This coming from someone who can boil water well.
